Sweet & Salty Seed Balls
Ingredients (for 12-14 servings):
1/2 cup vegan plant protein powder (chocolate or vanilla)
1/2 cup shredded coconut
pinch of sea salt
3/4 cup peanut butter or almond butter
2 tablespoons melted coconut oil
2 tablespoons maple syrup
For Menstrual & follicular phase (day 1-14)
1 cup raw pumpkin seeds
1 cup flaxseeds (raw or ground)
For ovulatory & luteal phase (day 15-28)
1 cup raw sunflower seeds
1 cup sesame seeds
Directions:
In a food processor, combine seeds, protein powder, coconut and sea salt. Blend until finely ground and crumbly.
Add in the peanut butter, coconut oil, maple syrup and blend until well combined and the mixture starts to form into one big ball in the food processor bowl.
Use a spoon or ice cream scoop to form into balls
Refrigerate up to 30 minutes. Keep any leftovers in the fridge.
