Ingredients:
2-3 medium zucchini spiralized
2 tablespoons extra virgin olive oil
2-3 tablespoons of Pesto (depending on preference of how 'saucy' you would like to make it)
1 cup sliced grape or cherry tomatoes
2 tablespoons grated Parmesan
salt and pepper to taste
Directions (salad):
Spiralize the zucchini or use pre-spiralized zucchini (store bought)
In a large skillet, heat 2 tbsp of olive oil over medium heat. Sauté spiralized zucchini for about 3 minutes.
Toss in sliced fresh cherry tomatoes. Heat just until the tomatoes are warm. Add in pesto, kosher salt and pepper to taste. Toss to combine evenly.
Optional: toss on a light sprinkle of parmesan cheesePreheat oven to 425°F.
