Pesto Zoodles

Ingredients:

  • 2-3 medium zucchini spiralized

  • 2 tablespoons extra virgin olive oil

  • 2-3 tablespoons of Pesto (depending on preference of how 'saucy' you would like to make it)

  • 1 cup sliced grape or cherry tomatoes

  • 2 tablespoons grated Parmesan

  • salt and pepper to taste

Directions (salad):

  1. Spiralize the zucchini or use pre-spiralized zucchini (store bought)

  2. In a large skillet, heat 2 tbsp of olive oil over medium heat. Sauté spiralized zucchini for about 3 minutes.

  3. Toss in sliced fresh cherry tomatoes. Heat just until the tomatoes are warm. Add in pesto, kosher salt and pepper to taste. Toss to combine evenly.

  4. Optional: toss on a light sprinkle of parmesan cheesePreheat oven to 425°F.
