Ingredients:
2 tablespoons extra virgin olive oil
1 cup onion (chopped)
1 teaspoon dried thyme
1 teaspoon sea salt
1 teaspoon freshly ground pepper
4 cups parsnip (peeled and chopped)
1 pear (peeled and chopped)
1 sweet potato (peeled and chopped)
6-8 cups vegetable stock (depending on how thick you like your soup)

Directions:
Heat the oil in a large pot over medium high heat. Add the onions and cook for 5 minutes. Add the dried thyme, salt and pepper.
Add the parsnips, pear, sweet potato and stock. Bring to a boil, reduce the heat and simmer for 20 minutes.
Use a blender to puree the soup until smooth.
Return to the pot, season with salt and pepper to taste.
