Overnight Tropical Oats
Ingredients (makes 4 servings):
4 cups almond milk
1 cup steel cut oats
1 tsp cinnamon
1/4 tsp sea salt
1 tsp vanilla extract
Optional Toppings: Greek yogurt, honey, hemp seeds and chopped pineapple
Directions:
In a medium sized pot, bring almond milk to rapid boil
Add remaining ingredients. Bring back to a gentle simmer for 1-2 minutes.
Remove from heat and cover.
Let sit out at room temperature overnight.
Reheat and serve with optional toppings.
