Overnight Tropical Oats

Ingredients (makes 4 servings):

  • 4 cups almond milk

  • 1 cup steel cut oats

  • 1 tsp cinnamon

  • 1/4 tsp sea salt

  • 1 tsp vanilla extract

  • Optional Toppings: Greek yogurt, honey, hemp seeds and chopped pineapple


Directions:

  1. In a medium sized pot, bring almond milk to rapid boil

  2. Add remaining ingredients. Bring back to a gentle simmer for 1-2 minutes.

  3. Remove from heat and cover.

  4. Let sit out at room temperature overnight.

  5. Reheat and serve with optional toppings.
