Chipotle Bowl

Ingredients:

  • 1/2 cup olive oil

  • 1/4 cup water

  • 1/4 cup tahini

  • 1–2 chipotles in adobo sauce 

  • 1 small clove of garlic 

  • juice of 1 orange (about 1/4 cup)

  • 1/2 teaspoon salt

Build the Bowls: (measurements per bowl)

  • 1/2 cup roasted sweet potatoes, chopped

  • 1 soft-boiled egg

  • 2 cup kale, washed and chopped

  • 1/2 cup quinoa, cooked

  • 1/2 avocado, chopped

Directions:

  1. Pulse all sauce ingredients in a food processor until smooth. Season to taste.

  2. Cook / prepare your bowl ingredients. 

  3. Drizzle with the Chipotle sauce
