Ingredients (for 4 servings):
1 can chickpeas, rinsed and drained
1 tsp fresh lemon juice
1 tsp tahini
1/2 cup cherry tomatoes, quartered
1/2 tsp extra virgin olive oil
Spelt bread, toasted
Fresh garlic
1/4 cup parsley
Garnish:
Spinach, chopped
Sesame seeds
Lemon wedges
Directions:
Place chickpeas in a small bowl with the lemon juice and tahini. Mash with a fork, leaving some texture. Season with salt and pepper.
Combine tomatoes, parsley and oil. Mix well
Toast bread and rub fresh garlic (halved) over it.
Spread chickpea mixture over toast. Top with tomato salad and other optional garnishes. Serve with a lemon wedge.
